EATING CLEAN TO GET AND STAY LEAN

I expected to stay home, do homey things- laundry, make dinner and paint the basement. Sounds fun- huh?
Well, the phone rang shortly after 10AM and my whole day changed. A friend who owns a local gym referred a member who torqued his back. These last minute appointments I hesitate taking, but I knew this was someone who needed help, so I put on my Super Hero massage mask and headed to the South land (no mans land to me) to meet the person who needed therapy. An hour and a half later my rescue was feeling better. The coolest thing about this was not what I did, but what I learned about this person. This is family man, married, a twin boy and girl. You can tell he adores his family by they thing he said  as he was beaming talking about them. I found myself smiling and thinking of "family time".

His adventure has already raised more than $34,000. AMAZING!
(And I thought I was sacrificing my time today.) Talk about putting things into perspective.
Anyway, it was great meeting and helping someone who has done so much for others.

I had family time planned, so afterwards I ran to Costco after to pick up a brisket and some veggies. Another quick stop at Hen House and I was home in no time making a rub for the brisket. A few hours later, I added some carrots, parsnips and whole peeled red potatoes to the Dutch oven and waited for my two favorite guys, my son and Stormy, to join me for dinner. Oh, and my friend Stacy Palmer told me about roasting green beans and I made some to go with the brisket. Thanks Stacy! We really enjoyed them.
After dinner we sat and giggle over the cats rolling around the carpet enjoying the cat-nip and Buster doing high jumps as Stormy was teasing him with his stuffed turtle. I love family time! Besides The Freaks Come Out at Night. It's safer at home. ;)

Brisket Rub
2TBSP Chili Powder, 1 TBSP Garlic Powder, 1 TBSP Onion Powder, 1 TBSP of Oregano, 1 to 2 TBSP Brown Sugar, 2 tsp Dry Mustard, 2 Bay Leaves
Preheat oven to 300 degrees, mix all the dry ingredients together and rub both sides of the brisket. Roast for 1 hour-uncovered.
Add 1 to 2 cups of beef stock to yield 1/2 inch of liquid in the pan. Cover the pan , lower heat to 300 degrees and cook for about 3 hours.

Come to think of it-I bet this would be pretty good on chicken too.  If you try this out, let me know what you think. Enjoy!
